Lanzhou Beef Noodles, the most distinctive and most popular snack in Lanzhou originated in the period of Emperor Guangxu and they were first created by Ma Baozi, a Hui elderly. They have won the praise of
the customers both at home and abroad for “the soup is clean and clear, the beef is soft and delicious, the noodles are fine and pliable" and ”one clean (clear soup), two white (white radish), three red (red chili oil), four green (green parsley and garlic leaves), five yellow (bright yellow noodle)”.
