Jingning Guokui, also called Jingning bread, is traditional food in Jingning. It has special producing process and it is well known both in Gansu and other provinces for its unique taste. Jingning Guokui is characterized by snow-white flour, a smooth appearance,the proper thickness, a bright color and a crisp flavor. It is delicious and appetite- inviting. Besides this, it is not easy to break or
sour spoil, so it is easy to be carry. There are two kinds of Guokui: one is of oil, the other is of sugar. Jingning Guokui is not only the traditional food of Hui people in Jingning and Pingliang, but also the favorite staple food of the people of all ethnic groups.
